LIGHT & FRESH
Eating light, fresh food is undoubtedly one of the best things about summer. Whether you are cooking for two or for your family and friends, you need to get dinner on the table fast.

STICK IT TO THEM.
Kebabs are a simple way to get meat, vegetables and even fruit, in one convenient meal. Serve with a green salad and some crusty bread, and in less than 20 minutes (including cooking time) barbequing has never been easier.

EAST MEETS WEST
Brush large peeled prawns with a light soy and honey marinade and skewer with wedges of zucchini, eggplant and capsicum. Serve with a chilli dipping sauce for extra tang.

MEDITERRANEAN
Lemon slices, bite sized pieces of chicken and cherry tomatoes make a light, fragrant combination of flavours. Sprinkle with olive oil and fresh oregano before throwing them on the BBQ and when they’re done, squeeze the lemon over the chicken for a zesty taste.

HAWAIIAN LUAU
Pork loin, pineapple and red onions make a sweet combination on a stick. This lineup can be made a little spicier by brushing on some plum sauce before cooking.

SIP, RELAX, AND REPEAT.
Want a drinks menu that’s a little different? Try some of these light, fragrant cocktails for sipping on the patio. For larger groups, simply triple the ingredients and serve in ice-filled pitchers.

ICED TEA WITH PEACHES AND GINGER
Bring four cups of water to the boil then brew two ginger herb tea bags for ten minutes. Discard the bags and cool the tea to room temperature. Stir in two tablespoons of honey and a thinly sliced peach and serve in tumblers with plenty of crushed ice.

MELON-MINT COOLER
In a blender, puree four cups of seedless watermelon and one cup of lemon cordial. Stir in several sprigs of fresh mint and pour over ice. For an instant cocktail, add white rum or vodka before serving.

POMEGRANATE PUNCH
Mix half a litre of pomegranate juice with one litre of sparkling mineral water. Add two limes, cut in quarters and float frozen raspberries or blackberries in the serving glasses. Add some sparkling white wine for a fizzy treat.
